TEDxSFED – Esther Cook

Esther Cook has been Chef Teacher in the Edible Schoolyard kitchen since its inception in 1997. Over the past fourteen years, she has developed a portfolio of innovative kitchen lessons linked to classroom curriculum and life skills. Ms. Cook brought years of cooking experience to her position as founding Chef Teacher. She has worked the line in Bay Area restaurants, baked bread into the midnight hours in New Hampshire, and catered for Garden District folks in New Orleans. She has collaborated with local theater and bookbinding artists to teach cooking, book-making and storytelling to immigrant children in Oakland, her home of 30 years. While working as a line cook at Citron in Oakland, Ms. Cook also volunteered for Market Cooking for Kids – a CUESA program that linked local farms and chefs to public schools to provide hands-on cooking experiences to the students. It was the profound staying power of these interactions with youth that led her to pursue teaching cooking to children. Esther grew up on a farm in rural New England, where meals came from the garden and were shared around the table with family and friends. As an adult the quality of those times informs the experience she strives to create with her students. It is her belief that the kitchen is a natural classroom brimming with delicious educational opportunities. Cooking up Change Chicago 2011 Winning Moment

This video spotlights the winning moment from Cooking up Change Chicago on Nov. 3, 2011, when the student chefs of Chicago Vocational Career Academy (CVCA) learned that they won first place with their flavorful lunch of oven-friend chicken with sides of sweet potato salad and collard greens and cabbage. The student chefs will receive scholarships to Washburne Culinary Institute and will travel to Washington, DC to compete in the Cooking up Change national finals. After-School All-Stars at Wai’anae Intermediate School

After-School All-Stars provides fun extended learning opportunities for middle school youth. Kids are provided three-hours of programming. The first hour includes homework and tutoring followed by enrichment and fitness classes such as cooking, hula, hip hop, glee, ukulele and all sports. The program is grounded in a simple premise—kids with somewhere to go, end up going places! Activities launched at Wai’anae and Nānākuli Intermediate Schools the week of August 15, 2011. Students can participate in activities ranging from robotics to basketball and even sushi making. That expansion of the After-School All-Stars to the Leeward Coast was made possible through support from Kamehameha Schools’ Ka Pua Initiative, the Campbell Family Foundation and additional grant funding.
